a healthier fix for that sweet craving (and it's fast too)

This has become a popular dessert at my house so I thought I'd share it.

It is far better for you than the Ben and Jerry's I eat way too often. Vanilla ice cream by itself is not that bad for you if you buy the right kind and the berries pack a nutritious punch!  The trick to making this a good choice for dessert is all in which ice cream you choose.  I have searched high and low and the best, most all natural ice cream I have found is Breyer's All Natural Vanilla. It only has about six ingredients (and I can pronounce all of them!) and it is pretty low in sugar.

Vanilla Ice Cream with Fruit Topping

  • first simmer fresh or frozen berries in a saucepan with about 2 teaspoons sugar for each cup of berries 
  • When the berries are cooked into a sauce let them cool a bit 
  • use the berries as a topping on vanilla ice cream 
Like I said-- if you're craving dessert, this is a good one.  The berries are really good for you and the ice cream is okay every once in a while!

Love this! I am freezing my tail off lately, but will certainly have this tasty treat when my bones warm up. (What on earth did I do when I lived in WI!!)
